Vanilla Funfetti Cupcakes with Vanilla Buttercream Frosting

Growing up what was your favorite cupcake?  When your birthday came and your mom asked what you wanted to bring in to share with classmates, what would you say?  My answer was always funfetti cupcakes!

Something about the rainbow colored cupcake and rainbow speckled frosting made every bite magical.  Making it the best cupcake I'd ever tasted.  Growing up I'd always thought if you wanted funfetti, you needed to buy the special boxed cake and frosting.  

Now that I'm older, funfetti still remains one of my favorites, although the secret to making this childhood treat homemade is far easier than I would have ever imagined as a child.  The secret ingredient- sprinkles; beautifully colorful rainbow sprinkles.

With the use of a deliciously moist and fluffy vanilla cupcake recipe, the addition of sprinkles provides that special treat you can't resist.  This recipe in particular is just that.  Reminding me of the boxed cake that has been perfected.  It's light, fluffy, moist, and perfectly delicious.  The frosting is light, silky smooth, and perfectly sweet providing you with a perfect homemade version of a childhood classic.

So when your kids ask you to make their favorite funfetti cupcake, give this homemade version a try!

Recipe Tips
  • I'm still learning the tricks to piping frosting, but I found this frosting is nice and thick, but the more you handle it, the lighter it gets.  It didn't pipe well for me.  I might not have had a large enough tip because the sprinkles were getting stuck. Eventually I gave up on the piping because the frosting was getting too soft the more I tried different ways to pipe. Hope you find a better way to pipe than I did!

Whisk together your flour, sugar, baking powder, and salt in a large mixing bowl:


Beat your softened butter in the bowl of an electric mixer on medium speed for 20 seconds:


Add your sour cream, egg, egg yolks and vanilla extract to the bowl:



Beat on medium speed until combined:


Add your flour mixture and beat on low speed:


Mix until combined.  Increase your speed to medium and beat for 30 seconds or until silky smooth:


Add your sprinkles:



Mix by hand until incorporated:



Evenly distribute your batter into a muffin pan lined with cupcake liners:


Bake at 350 degrees for 20-24 minutes:


Look at that beautifully speckled cupcake!



To prepare your frosting, cream your butter in the bowl of an electric mixer over medium/high speed with the whisk attachment for 5 minutes.  Make sure to stop and scrape the bowl at least once.


Then lower your speed and gradually add your powdered sugar:


Once the powdered sugar is incorporated, increase the speed to medium/high and add the vanilla extract:



Continue to mix on medium/high speed for 2 minutes until light and fluffy:



Your frosting will be nice and thick and creamy:


Add your sprinkles to the frosting:


And mix by hand until incorporated:


Transfer your frosting to a plastic bag fitted with a piping tip:


And frost your cupcakes:

Serve and enjoy!

Makes 12 cupcakes
Prep Time: 45 minutes
Bake Time:  20-24 minutes

Ingredients
Vanilla Cupcakes

1 1/2 cups flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
8 tablespoons butter (1 stick), at room temperature 1/2 cup sour cream
1 egg, at room temperature
2 egg yolks, at room temperature
1 1/2 teaspoons vanilla extract
3 tablespoons rainbow sprinkles


Vanilla Buttercream Frosting
1 cup (8-ounces) butter, at room temperature
2 1/2 cups powdered sugar
1 tablespoon vanilla extract
3 tablespoons rainbow sprinkles

Directions

Then lower your speed and gradually add your powdered sugar.  Once the powdered sugar is incorporated, increase the speed to medium/high and add the vanilla extract.  Continue to mix on medium/high speed for 2 minutes until light and fluffy.  Once your cupcakes have cooled completely, transfer your frosting to a large plastic bag with the end snipped off and a piping tip pulled through.  Frost your cupcakes and serve!
